Cultivation and local production

At Terre dei Ghelfi, we craft a truly unique extra virgin olive oil. Each year in October, our precious olives reach perfect ripeness. With great care, we harvest them by hand and gently place them in special crates — and it is on that same day that their transformation begins.

The olives are taken to a local mill and cold-pressed within 4 to 5 hours of harvest, in order to preserve their high content of polyphenols, the vital soul of our oil.

Rich in healthful properties and bold in flavor, the oil is then stored in stainless steel tanks at a controlled temperature of 18°C. In this cool and protected environment, our Organic Tuscan PGI Extra Virgin Olive Oil Bolgheri develops its elegance and prepares to enchant the most refined palates.

Our label speaks for itself: it is the seal of authenticity that attests to the origin and quality of our oil. Each bottle has a unique alphanumeric code, a real passport revealing the true story behind the product.

This alphanumeric code reveals to the consumer every stage of the oil’s journey: the olive grove where it comes from, the olive that was carefully harvested, the mill where it was milled, and finally the company that handled the bottling. It is a way of paying tribute to all the people involved, who with passion and dedication contribute to creating an extraordinary oil.
