1961 Bolgheri Superiore DOC 2023 is one of the rare pure Cabernet Sauvignon wines from Bolgheri, dedicated to founder Alberto Ghelfi and conceived as the flagship expression of Terre dei Ghelfi.
Born from the encounter between time, terroir, and passion, this wine reveals the deepest essence of the estate, translating Bolgheri’s identity into elegance, structure, and longevity. A wine of character, created to evolve and to tell the story of its origin with every sip.
TASTING NOTES
Deep and compact ruby red in color, with vibrant violet highlights. The nose opens with intense aromas of small black fruits, layered with nuanced notes of sweet spices, coffee, and dark chocolate. On the palate, the wine stands out for its remarkable complexity and the silky texture of its tannins, delivering depth, balance, and a refined, elegant mouthfeel.
ORIGIN AND TYPE OF TERRAIN
Vineyards with an estimated age of over 20 years, located in the municipality of Castagneto Carducci, registered in the DOC Bolgheri register, among the first to be planted. The active layer of the soil is deep, characterised by a franc-sandy grain size, poorly endowed with organic substance and tending to be acidic.
PAIRINGS
This Bolgheri Superiore pairs beautifully with grilled or roasted red meats, braised and slow-cooked dishes, as well as game and herb-roasted lamb. It is also an excellent match for aged cheeses and shows great harmony with porcini mushroom dishes and dark chocolate, offering a refined and contemplative tasting experience.
VINIFICATION
The Cabernet Sauvignon grapes are hand-harvested in 15 kg crates. Alcoholic fermentation takes place in stainless steel tanks at 28–30°C, using selected yeasts specific to each individual batch. Extraction is managed through pump-overs, délestage, and gentle manual punch-downs for smaller lots, ensuring balance between color, aromatics, and structure. Malolactic fermentation occurs simultaneously with alcoholic fermentation in stainless steel tanks, using the co-inoculation technique.
AGEING
The wine ages in French oak barriques for one year, developing depth, complexity, and elegance.
BOTTLING
After bottling, the wine continues to mature with at least 12 months of bottle aging, achieving harmony and expressive balance.
