AUDERE

Audere, meaning “to have the courage to dare,” embodies the philosophy that guides Terre dei Ghelfi: looking ahead, embracing innovation and constantly pursuing excellence, while remaining deeply connected to its roots. Born from the union of Cabernet Sauvignon and Cabernet Franc, it is a wine of character, where the Bolgheri terroir and the influence of the sea come together in an intense, contemporary expression. A wine that captures the spirit of the estate and the courage to embrace its continuous evolution.

TASTING NOTES
Deep, intense ruby red with elegant violet hues. The nose reveals blackberry, blackcurrant, raspberry and wild berry notes, accompanied by delicate hints of vanilla. On the palate, it is intense, powerful and structured, with a bold and enveloping character.

ORIGIN & SOIL
Audere’s vineyards lie 20 metres above sea level, on sandy soils characterized by Bolgheri conglomerates and alluvial schists, reflecting the geological complexity of the territory.

FOOD PAIRINGS
Audere pairs naturally with rich and flavourful dishes, from traditional Tuscan cuisine to meat-based preparations. Ideal with cured meats and sausages, game ragù, braised and slow-cooked meats, and grilled meats, where its structure and intensity find their perfect balance.
Icona Maturazione
VINIFICATION
Cabernet Sauvignon and Cabernet Franc are vinified separately. Fermentation takes place in stainless steel tanks at controlled temperatures, followed by approximately three weeks of skin maceration to enhance the structure, colour and character of the grapes.

AGING
The two grape varieties are aged separately for approximately 7 months in French oak barriques. They are blended only in the final stage, creating the balance and distinctive character of Audere.

BOTTLE AGING
After bottling, Audere continues to mature in the bottle for at least 3 months before release, completing its evolution.
